Sweet pudding, similar to rice pudding but with less carbs, lower fat, higher protein and potassium to boot.
Ingredients
Directions
- Soak quinoa in 1 1/2 cups water for 30 minutes. Drain and repeat.
- Add 1 1/2 cups water and microwave on high 5 minutes.
- Stir and add cranberries. Microwave another 5 minutes.
- In saucepan heat fat free half and half, vanilla, cinnamon and sweetener (like Splenda).
- Whisk eggs in another bowl. Add about half hot milk mix a little at a time to eggs.
- Add rest of egg mix to milk mix and cook until thickened.
- Add grain to milk mixture. Stir well.
- Spoon into 8 serving cups and refrigerate for 2 hours or overnight.
