Classic Mashed Cauliflower

A great substitute for mashed potatoes.

Ingredients

Directions

  1. Chop cauliflower into flourettes, boil until very tender (about 10 minutes).
  2. Drain and place in a blender or food processor.
  3. Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached.
  4. Season with salt and pepper and/or chives to taste. Serve immediately.

I was surprised at how much I liked it. I added black pepper, a pinch of salt and some garlic. A very good substitute for mash and would even have it instead of rice.

Skiped the olive oil and salt. Added a little chicken stock, parmesan, garlic, pepper. No one knew they were not potato.

This sounds SO good! I am definitely going to make this dish this upcoming week. I do have a question ......... would someone please tell me what is considered ONE serving for this dish? I'm thinking one cup??

Great recipe! I made it hoping it wouldn't have that "cauliflower smell" that I don't care for. But it was great! I actually used cream intead of olive oil and loved it!

I make mine with a Laughing Cow Cheese wedge and a tsp of Whipped Salted butter. Yum :)

I tried this and wasn't too careful on the ratios. The consistency I got felt more like polenta (I'm not complaining). I agree that this is a blank slate. I added a bit o' butter to richen it up a bit and it was fabulous. I used the leftovers to make a kind of pan seared cake that was fabulous. I'd say get creative... it could be anything you want. Roasting the florets instead of boiling should save some of the nutritional value and add some nut i ness. enjoy!
