4/22: Fasting Blood Sugar 6.2 mmol/L

Well that is a relief in that the weight has come back down after the last week's, shall I say, fiasco...lol. Still dealing with some issues from that but nothing I can't handle.

Yesterday was a snacking sort of day but in a good way. I cooked up a dozen eggs & left them in their shells. I also cooked up 2 lbs of bacon. They both are in their respective containers in the fridge. I had bought some pepperoni sticks so I put those into a container to store in the fridge. Can you see my theme? Yup, you've got it right. All protein based items that I can run to when I get the urge to snack (as I munch on 2 pieces of bacon). I also have some Cracker Barrel cheese slices and I still have to cut up the last of the pork roast but perhaps I will use that to make a meat/veg one-pot meal for tonight. Not sure yet.

And tomorrow is my son's 36th birthday but he doesn't want anything - no card, no cake, no nada... This mom is going PFFT! So I may just in fact make him a tiny cheesecake and top it with raspberries and then call it a day ;)

Lots to do and already late starting my day so time to finish my cup of wake-up aka coffee and get motivated but a little hard when it's cold and raining outside. I will make it work somehow ;)
