4th day with no alcohol and no sugar and sticking to keto is helping but today my proteins e not high enough and carbs are a bit over 30g. Still struggling with adding fibre without adding carbs, any suggestions?

Seems fiber and carbs go hand-in-hand. Hard to find fiber without the carbs, too.
