Fixed pork fried cauliflower rice for dinner. I love this stuff, have enough left over for 3 more meals this week.

It is my own recipe. 4 1/2 cups riced cauliflower 1 1/2 cups birds eye pepper strips 2tsp minced garlic 2 cups shredded cabbage 1 1/2tbsp low sodium soy sauce 2tbsp kikkoman teriyaki marinade & sauce 2 large eggs 1 lb ground pork Directions Have all ingredients riced and shredded before beginning. Heat a non-stick skillet over medium high heat, add the ground pork. Cook until browned (2-3 mins), pour the fat into a bowl for later use, then move pork to a plate, turn off heat. Use 2tsp fat to scramble the eggs. Return heat to medium high and add the 2 eggs, scramble, chop into pieces and move to a plate. Add 2tbsp fat to the pan, then add the 2 cups of shredded cabbage, 2tsp minced garlic and 1 1/2 cups of peppers, stir to coat, cook about 5 minutes to soften. Add the 4 1/2 cups riced cauliflower and stir in with the veggies. Stir in the 1 1/2tbsp soy sauce and 2tbsp teriyaki sauce and continue to cook another 3 minutes, then stir in the ground pork and scrambled eggs, cook another 2 minutes, remove from heat.
