I read your post on your challenge today 1/12/18. I am not joining the challenge because I am not following that WoE, but I would say Greek yogurt 4 % fat or 4% cottage cheese for a soft food.

LOL! I don't drink alcohol, either. The rum is to keep the ice cream from freezing too solidly and getting ice crystals on it.
