I have been in a baking mood for a couple of weeks now. I am trying to make lighter meals and desserts than are usually fattening. With the holidays approaching, I need to adapt recipes so I can eat the same meals as everyone else. Right now, I have just baked the most delicious blue velvet cupcakes (from the box.) Each cupcake is 80 calories (without frosting.) I used diet A&W root beer instead of eggs and oil. While the cake does not rise the same way it would traditionally, it taste good and smells divine (like cotton candy.)The next food project I will tackle is a lighter version of stuffed baked onions. I have not baked in a while and I did not realize how much I have missed it until recently. For me, baking is as therapeutic as walking.

You can substitute pureed zucchini for oil and eggs too FYI...one website for sweets I like to use is "Chocolate-covered Katie"...she's amazing!
