I like ramen but unless you are a Keto person and need the sodium, the salt is a killer. I have tried making my own broth but not as good as restaurant.

recommendation for home made broth - use bones and fat, add a sachet of herbs and spices, boil for a while on low heat (I like 2 hours at least) so it thickens, skim and bottle for the fridge. good for a week or so in a tightly sealed jar. slow cookers on low for like 4 hours work wonders too, the bones are where the flavors are at!!

when we make it, we purchase fresh ramen noodles then assemble with soft boiled soy eggs, pork belly, etc. and now they have tonkatsu broth, etc. which really makes it easy. but this one is a ramen kit from a local pop up called Mochiko - with homemade ramen noodles, insanely delicious broth, and soft boiled soy eggs with ground pork.

If you let the bones cook in the slow cooker all night or longer, the bones get soft and you can break them apart with your fingers. Let them cook even longer, then strain. You'll have that liquid gold and high dollar bone broth.
