Dinner tonight was chicken breast, roasted carrots, and cucumber, tomato, and onion slices in sour cream and dill. Very good and less than 300 calories. Calories not even 1000 yet today and that's with lunch and a snack added :/

Oooh I've been all about roasted carrots this week too! So yummy in cast iron skillet. I love that cucumber salad you have there. Wonder if it would be good with vinegar? Hmmmm. :)
