Unfortunately the leftover pork loin ended up dry. Still good but not great. Pork... it’s whats for dinner :).

I love your meals. Mind if i ask... Are you in the midwest? Haha, i recognize your meals now and i always think "now that is a real meal!" Reminds me of growing up.

Pork loin is so tricky to cook, can't be rare, but the next thing you know it's overdone. Have you ever tried doing the 500° for exactly 5.5 minutes per pound, then turn your oven off and do not open the door for 1 hour? Then remove from oven and lightly cover with foil for 5-10 minutes. After 10 minutes, the roast should reach a safe 145° and be slightly pink inside. I've found this gives me a roast that is always moist and delicious. (If you add vegetables, he sure they do not touch the roast while cooking)

Jen, I’m from Oklahoma :). I’ve always been a meat and potato person but in the last few years I’ve had to add in veggies for the kiddos lol. The rice is from chicken and rice but no chicken. I’ll need to add a bit more liquid next time.

@shir no I can’t do anything like that. When I make pork loin ints because I’ll be at the gym or a game and need to use the crockpot. Same with any beef, pork or venison roast, ham, turkey or country style ribs. If it requires me tending it more than every 2-3 hours I usually can’t do it lol. Unless it’s something on the stove that I stand over. Oldest is in archery, basketball, track and right now it’s volleyball. Middle is basketball, gifted program, chorus, 4H and just finished ambassadors. Youngest is basketball only thankfully. We fit the gym in around games and practices. They are lucky I don’t boil hotdogs and call it good lol.

What's wrong with hotdogs now? That poison is tasty. Hotdogs with mac&cheese. Gourmet dinner in 5 minutes 😂

Lol. Kids love it! I’m trying to get them to eat a more ‘adult’ diet. Save the hotdogs and Mac and cheese for when I’m a hurry or needing to save money lol. I must admit though that I absolutely LOVE homemade Mac and cheese! I can eat a whole meal of it.
