Strawberry Pretzel Salad

Make the crust
Remove frozen Cool Whip from freezer
Make the Jello using 1 cup boiling water and 3/4 cup cold plus 2 ice cubes.

Crust
4 oz pretzels (Snyder’s of Hanover) mine were salted, but use unsalted if you can find them, and you are watching your sodium intake. Use food processor or rolling pin to crumble the pretzel. Pretty small, but not crumbs. Combine well with 3 tablespoons melted butter and 1.5 tablespoons SWERVE
Pour into sprayed 8x8 square pan, pat down.
Bake 375 degrees for about 15 minutes. Some recipes said 350 degrees and some said 400 with varying times. I went mid ground.

Filling
Combine 4 oz. cream cheese. I used full fat because that is what I had on hand, but for the final recipe I changed to Philadelphia low fat because it made quite a bit of difference, 3 ounces SWERVE., and 2 oz cottage cheese in blender until smooth. Fold in 4 oz thawed lite cool whip.
Once crust is cool, spread filling over top. Refrigerate till set

Strawberry topping
1 .3oz (8.5 gm)size sugar free strawberry jello
Combine with 1 cup boiling water. Let cool to close to room temp.
Add 3/4 cup cold water and 2 ice cubes. Stir to combine well. Refrigerate. Once it has started to thicken add 16 oz sliced strawberries. Gently spoon over top of pretzel cream cheese combo. Refrigerate 3-4 hours.

Ok this is the final recipe and all agreed it was a keeper. .
