Going to a BD dinner next week where half of the 10 people have diabesity. I decided to take a favorite recipe and create a HEALTHIER, not perfect, version. I found several on the internet but they all had drawbacks so cannibalized them and made my own version. Will try it out on my unsuspecting neighbors tonight, they will give an honest critique.. I think this is also a recipe that you can alter sweetener types and amounts based on your own preferences.

The Base is finely chopped Hanover pretzels and butter and a bit of SWERVE. Baked in an 8x8 square pan for about 15 min.
Each step requires either a little cooling or chilling. I would recommend doing this part ahead of time so it can cool and you don’t feel pressured.

Center filling is full fat cream cheese (that is what I had on hand), just a little cottage cheese (blended with about 2 oz of SWERVE and thawed lite Cool whip folded in after blending.

The strawberry topping is one .3oz. (8.5 gm.) box sugar free strawberry Jello. I added 1 cup boiling water, stir well and let come to almost room temp. Then added 3/4 cup COLD water and 2 ice cubes. Refrigerated till just starting to set, then Add 16 oz. sliced strawberries and carefully ladle over the cream cheese mix that has chilled a bit in the fridge. Return to fridge and chill about 4 hours till set.

Most of the recipes I saw used what I thought was even too much SWERVE, so just mixed and tasted. — if this works out OK I will post an update with the nutritional breakdown and make any corrections in what I originally put in it.

We have eaten this salad many times but we have never tried to make it more diet or diabetic friendly. I wish I could have just found a recipe on the internet but they all had a quirk to them. I’ll see how this turns out AND if those amongst them who so desperately need a few healthier choices , will actually eat it.

what is a swerve

Jbmerritt— it is not a swerve. SWERVE is a brand name of a sugar alternative that does not have net carbs and does not affect the blood sugar of diabetics. Comes as a white and a brown granulated product.
