I love to use Nori rolls for a keto sandwich (1 gm carbs). They are good nutrition with iodine for your thyroid, and a tasty way to roll up the fillings. This is cream cheese, lox spinach and red pepper with a splash of balsamic vinegar.

I don't bother to make it soft; I like it chewy, but any moisture softens it.
