diehard3's Journal, 20 Mar 19

I didn't do so hot yesterday, we had a meetining to discuss our upcoming golf league followed by lunch. The lunch kind of set me off for the rest of the day. I was way too heavy on carbs, kind of like an itch that I couldn't scratch. I was carb hungry all day. Today is better. I have started of with a shake with flax seed and it is very filling. Later on today we will bowl and have our usual side salad with grilled chicken at McDonalds for supper. When you fall off the wagon you just jump right back on and continue your plan.

Thank You liv001. Today is a better day. I make this little mini pizza or tostada according of what I have to put on it. I take a low carb tortilla, the small size and heat it in a skillet until it browns on one side then flip it over and brown the other side. Then today I had Picante sauce so I slathered 3 TBSPs on the tortilla and sprinkled it with 1/4 cu of shredded cheese. I turned the heat down and left it in the skillet until the cheese melted. I took it out with a spatula and cut it into 6 slices and that was my lunch, yummy and full of flavor. Now if I would had had some spaghetti sauce, the same recipe would have been pizza flavored. You can add cooked ground beef and other things to make your tostada or pizza interesting. When the tortilla browns it becomes crisp and you can lift it out of the skillet with a spatula.

I have to keep these create-as-you-go ideas in mind. Sounds great!
