I bought 2 dozen red chili tamales from a gal at my gym today. I came home and worked at developing a sauce for them. Roasted Tomatillo based with roasted onions, garlic and Anaheim chili’s.. Then just started adding a bit of cilantro, cumin adobo, some kind of dried chili that I found in the pantry— a little homemade chicken stock, a bit of crushed canned tomatoes and on and on. Oh my goodness what a terrific combo it made. Ended up with about 1 1/2 guarts. Just enough to get me through the 24 tamales. I will never be able to recreate this sauce. Needless to say what I entered in the food log had no bearing in reality so just picked something as a place saver. Not to mention the 100 times I “tasted” that sauce while trying to come up with the final product. I need a “wife” who cooks for me:

Well ate those tamales and sauce again the next night and that sauce was even better than day #1. Darn. I will never be able to recreare
