I’ve just put up some homemade sauerkraut- waiting patiently to try it but I have to wait another 2 weeks.

I have never made homemade and I understand that it shouldn't be heated up. Have you heard this before? You are such a clever girl, Lynne, making your own!

What I’ve heard is that it should not be heated when or as it is being made, but once made you can Fry it up or whatever. My mom used to make a borscht with it.

I am reading conflicting articles about cooking it ... they are saying it destroys the probiotic benefits. Eat it raw not cooked is what this one is saying: https:// www.makesauerkraut.com /storing-sauerkraut/

Ah ... I haven't had sauerkraut in a while. Love it on pork or with Polish sausages. Mother always bought the caned kind and heated it up with dinner. We poured apple cider vinegar over it. Canned isn't supposed to have the probiotics in it, I don't believe. I have been drinking Kombucha tea, though, when I think to buy it at Sam's in a small case.
