Good day. “Chashu" Ramen for dinner....a treat. I cooked a 10 ounce piece of pork in miso, shoyu, mirin and dashi with a carrot and onion slice for 3+ hours on low on the stove top. Below-- I stayed 3 nights in this neighborhood in Beijing. Fun to go into a restaurant , walk around the tables looking at what people were eating then point to the food I wanted and then myself and the food wouldd arrive in a few minutes.

Great. Hope you can make your own.
In the town of Hakata on the island of Kyushu they make the soup base by cooking pork, vegetables and pork bones for 18+ hours. They serve it with a few large slices of roasted pork on top.
Up in Hokkaido they serve miso soup base,ramen, a scoop of corn w/ julienne carrots and a pat of butter on top of the ramen.

oh my goodness bango1, that's sounds sooo delicious. On another note recently you mentioned soba sauce (dipping) for my soon vegetable noodle to bring out the flavors, so I investing time researching how to properly cook soba noodles and dipping. I'd never tried buckwheat noodle before but I can't wait to do so. It will definitely be posted to this site when I do. Thank you for the information on the subject.

Thsiun- It is good.,,,,so good that some people drink the outrageously salty soup base. Not there now. I’ll be in Hakata Japan in October for vacation at some hot springs. Thanks for your comments one and all.
