PREPPING AHEAD..goood tuesday morning..i took the day off yesterday from the fitness room..just ached all over from bouncing around on rider sunday an doing 2 different rides to get my 25 plus miles..for me i wear padded liners under a padded bike bib shorts..i also use a cream to keep thighs from chaffing an also the bottom from doing the same..if your gonna ride its well worth buying the right clothing to make the rides more enjoyable..an speaking from experience..dont wear underwear when riding...its not a good idea..will definatly make sitting down hard for several days..as for bike parts i use a site www.nashbar.com ...great site..i ordered from them yesterday as i didnt get outta town ..we had rain an storms..so just went on web an ordered a new set of riding bibs, new tire pump and a new saddle..im hoping that helps to solve my bottom issues...if anyone has any bicycle questions..im here to help if i can..

spent couple hours in kitchen prepping ahead on snacks..here are easy recieps that i used yesterday...

CHEESE CAKE FATBOMBS
Ingredients .. measurements for 12 serviings give or take..

5.88 oz Cream Cheese softened
1.33 teaspoon vanilla extract --.I used carmel extract..
1.41 oz Erythritol -- I used pyure/organic stevia
4.51 fl oz Heavy Cream

12 servings or alittle more depending on how full you make mini cupcake liners...


Put the cream cheese, vanilla and erythritol into your kitchen aid and mix on low. Alternatively put into a bowl and mix with a hand mixer on low speed for 2 minutes, pausing to scrape down the sides of the bowl with a spatula, so as to achieve a smooth consistent texture.
Add half of the Heavy Cream and mix for another 2 minutes. Let the bowl sit for 3-5 minutes as erythritol in its granulated form requires a little extra time to dissolve.
Add the other half of the Heavy Cream and mix on medium speed for 3 minutes until the mixture is thick with firm peaks.
Gently spoon the mixture into a piping bag like this one and pipe into mini cupcake liners. on mine i only filled liners half way..making more snacks..Set in the fridge for at least 1 hour before enjoying. when you take one out..just put in your mouth an let it melt..mmmmmm good..i used mini cupcake liners an then put them into mini plastic cups with lids..all can be found at walmart..

SIMPLE CAULIFLOWER BREAD

1 bag of cauliflower, 1 egg, add 1 cup mozz cheese

nuke bag of cauliflower in microwave...open bag in bowl...add egg...put in mozz an stir up..

get spoon an spoon mixture in cup cake liners that are in cupcake pan...
one done put in oven at 400-425 for 30 min...i think the temp needs to be alittle higher as my cauliflower is sticking to the liners still..

sitting here drinkin my coffee latte..need to ride today..plumber is coming this morning to check on garbage disposal..its not working..not that we use it anymore..thinkin of just having it took out..but dont know if its a good idea or not..leave that up to the plumber..well time to get up an move..virtual miles to ride...
