FIBER: I guess I haven't been eating the daily requirement of at least 30g. of fiber lately. Some days I was only getting 6g.! This lunch plate is one messy dish of 19g. of fiber - not bad at all! Red cabbage, red kidney beans, my homemade version of Mexican Quinoa casserole and one boneless/skinless chcken thigh. I may regret all of that fiber later! LoL
