Another long night at the office and it is a dead zone, this time of night I am only here in case the phone rings and the other office peeps leave. Nothing of significance. It's gives me a chance to reflect on the last couple of weeks.

I'm surprised I haven't gained more than what I have, honestly. I have eaten more junk calories these last couple of weeks than I have the whole time I started this journey back in April. I think I have gone to the local frozen custard joint in town 3 times in 2 weeks!! Don't get me wrong it was good. And I didn't get the huge concrete with hot fudge, I got a small cup of plain chocolate custard. I have no regrets , in that since, but maybe still 3 times in 2 weeks might be much. Especially, since it's about 350 calories a wack. That's a meal. Or a really hefty snack. I ate that AND a meal. Not good.

I think a part of the problem has been my meal prep. I'm running out of ideas and not sure where to go from here. I keep a decent stock of frozen veggies, that I can just microwave in the steam bag and when I go home for lunch I set out my chicken in a zip lock bag to thaw. So, All I have to do in splash a bit of Zesty Italian dressing for a marinade and into the oven it goes. I'm at the point where I could really go for something different. I look at some of these "healthy" food blogs and all I see are casseroles and salad. Which might be good if you are cooking for 4 or 6 and needed the big batch recipes. I'm cooking for one here. If I make a casserole of anything I'm eating it for a week. Lunch and dinner. Day and night, night and day... *insert forehead slap here*

Anybody else have this problem?? I need to find a way to stay on track with out getting off course when it comes to meal planing.
What cookbooks so you like? And are there any to avoid?? (besides anything by Paula Dean) And is it just me or does every crock-pot recipe have cream cheese, pasta, cheddar cheese and sour cream in it!?!?!

I have 98 lbs to get to my goal and I don't want to backslide so much I'm just starting from square one all over again. I want to have 50 lbs of this weight gone by Christmas and hopefully the last 40 by next July. At least that's the hope anyway. But, I have got to get my eating at home straight. It's not just going from eating out to eating at home. It's also about eating at home.... Right. I grew up with fried everything or breaded everything or both. And while yes, it is more cost efficient to eat at home, healthy might not always be on the plate. I get to change that, for the long term. I have no intention of getting rid of the cream cheese, or cheddar block that will, over time; end up in my fridge. I just know that they are only there short term.

low carb ideas on Pinterest is how I find alot of my recipes. anymore I use that more than any other site for recipes because of all the appealing pics that tempts me to try them. Search what you are looking for even if it is in general.

Invest in a set of good freezer containers and divvy up those casseroles into portion sizes. Keep one or two out and freeze the rest. Right now, I have been cooking for just one instead of the usual two and I know the dilemma you are facing. It is hard to cook for just one person. Hang in there; you will do this! We are all here for you.

This road to healthy living is a long one. And it is filled with twists and turns. The more results you see. The more it inspires you to do. In order to see more changes. I would suggest that you just start off with small steps. For me it started with removing soda and sugary drinks from my diet. And replacing them with water and sparkling water since it has a taste to it. Do what is what comes easy at first and as you master that keep adding on. Numbers on a scale aren't important it's about how you feel. As for the meals you have to Taylor them to meet your own needs. It is okay to cut recipes in half to fit your needs. Or for those recipes that have a lot of cheese and high calorie ingredients you can substitute low calorie/far cheeses and so on. I would suggest the show Hungry Girl to get healthy recipe ideas. I too recommend the freezing of small portions and saving them for later. It makes it so you can do portion control and know exactly what you are eating. Plus is saves a ton of time in the long run. I always run into problems with most recipes because I am also cooking for one. It makes things a little harder. Good luck though. :)

Batch cooking and freezing is what works best for me,, you don't have to eat it all at one time. but you always have something on hand. I don't know what plan you are on but on my plan I can have cream cheese and sour cream,, thats what I love about LCHF,, you can still eat delicious foods and not worry about things . I love chicken,, but I love pork and beef as well,, and yes they are all in my weekly plan and I wouldn't change that for the world. The skys the limit when you eat LCHF .
