Didn't expect such a big gain! It has been nearly a month since I last posted my weight and I haven't been logging food or even paying much attention to it. Now to get to work.

My anti inflammatory diet starts today. I didn't go grocery shopping for fruits and veggies so last night I was thinking about what I would do for breakfast. Usually I have coffee and some kind of toast. Can't have either now - no added sugar allowed. Or bread. Or butter. I could have black coffee but won't drink it. I will have a hard boiled egg, 2 tablespoons of chopped walnuts since I bought extra for a cake I made. I also have 2 Granny Smith apples left that I didn't need for the apple/walnut cake. So I'll have part of an apple. They are huge and really sour.
I have a bag of spinach I bought last week that I haven't opened yet and will make a salad with that. I am going to cook some chicken breast cubes I thawed out. Was going to cook with barbecue sauce and put in the salad. But the barbecue sauce has added sugar and I was going to use it anyway, just a couple tablespoons. But didn't want the added sugar on day 1. So thought about cooking it in the wok with soy sauce. I think soy sauce is inflammatory so I'll use tamari. I looked up recipes for barbecue sauce but they all have brown sugar.

Didn't stay up til midnight last night - I can't stay up until 9! But I woke just after midnight because of all the noise in the neighborhood.

Got nearly 5 inches of rain since Thursday morning. More than I've ever received in the 11 years I've lived here. Lots of puddles but no flooding. A friend of mine in Placerville got nearly 9 inches of rain and her yard was flooded and the street to her house goes over a creek and was washed away. She currently have no way to leave the house. So I feel really lucky where I live. I did go check the pond on top of the bank outside since her pond overflowed. Mine was just started to overflow so I used a bucket to remove some water. The bank is very rocky so I don't think I would get a mudslide. Funny after so many years of drought we go to flooding in many areas. Today is supposed to be nice but the rain starts up again by Wednesday and we may have another storm by the weekend.

thanks 2melons - The reason I have the Granny Smith apples and walnuts are because I made an apple/walnut cake with cream cheese icing during the holidays! I've never had baked apples except in cakes and pies!

Bananas - just remember not everyone desires or needs to eat the way you do or the way I hope to. So don't deprive 2melons of her baked apples or me of my apple/walnut cake not to mention strawberry shortcake, which in MY OPINION has to have whipped cream on it. Haven't had it for years but it's the only way I like strawberries. And I love apple pie, banana cream pie not to mention pineapple upside down cake. Not allowed on my new WOE but once in awhile after I meet my goal, who knows? Me not ever having it again is crazy, or maybe just bananas.

Frizzy, your apple, walnut, cream cheese cake sounds exactly like holiday perfection and better than sugarplums. I think that'll be my birthday cake next month. Is the recipe easy to find online or is it a family secret?

Bananas, I don't know why you feel you must slam myself and some others and frankly, I don't care. It's not your place to tell others what to do AND in such a preachy & rude way. We're all at least as smart as you & able to do our own research. The last time you did it to me I told you not to comment on my input and I'd do the same. I've kept my word. Perhaps your NY resolution should be to keep yours!

Thanks 2melons. I have a recipe that I got from my mom that she got from my dad's sister. On the recipe card it says German Apple Cake. I've found recipes online for apple/walnut cake, German Apple Cake and there is one called Old Fashioned Apple/Walnut cake (I think) that shows an old recipe card that has the same recipe, exactly except it shows 3-4 apples while my card has 4 cups chopped apples. The recipe from my mom just lists all the ingredients and says "mix all together and bake for 60 minutes". When I was younger I would do that, just put everything in the bowl and mix it up, It's hard with the apples. Now I have a bowl for the dry ingredients and one for the wet ingredients that I mix before adding together. I am not a good cook. This cake is really easy to over cook, especially at 350 for 60 minutes. One time I didn't cook it long enough, because it gets really dark. I ended up with applesauce inside. I will list the ingedients and you can do whatever you want - maybe check other recipes online for better instructions. I cook it in a cooking pan - I think it's about 12 x 9 inches, but some recipes show it in layers, and one even had it in a bundt cake. It's really hard to put the icing on so just one layer works for me. I grease the pan lightly so the cake doesn't stick. I'll list the ingredients next.

Apple/Walnut cake - 3 eggs, 1 cup oil, 2 cups sugar, 1 tsp vanilla, 1 tsp soda, 2 tsp cinnamo, 2 cups flour, 1/2 tsp salt, 4 cups chopped apples (very small ), 1 cup chopped walnuts.

2melons - I no longer make the icing, I just buy a container at the grocery store. But there are recipes online. I know I used one package of cream cheese and not sure what else.

I was wondering if you had a whole can of tomato soup for your dinner? I always thought tomato soup was really high in sugar. I looked at a can in my pantry, and it says a can of condensed soup has 30 grams of sugar =7.25 tsp. sugar. Could that be right? Anyway, I just thought I might mention it. Or maybe you’re just using up your canned goods like you mentioned. I’m trying to eat less inflammatory food, too, to help with my arthritis pain.

Fritzy, can you have dairy on your anti-inflammatory diet? I use stevia to sweeten my coffee. Could you do that?

It's been a month since I posted also and have gained about 9 lbs in 2 months. New Year's is a perfect time to start anew. Giving up all sweets, at least for a time is my choice, and I may ease into restricting high carbs eventually. Both are very addictive for me, but I can only handle baby steps at this time. Congratulations on starting work on your anti-inflammatory diet.

Fritsy, I love you for taking the time to type up the cake ingredients, instructions & pointers. Thank you!❣️ My grandmothers and mom's recipes are like yours; just ingredients (most without measurements) and no instructions. My sister and I figured them out by trial and lots of errors. I'm no great cook but can follow instructions and get it right the 2nd try😄. Now I'm looking forward to my birthday.

Thanks Broccolibabe - you are right there is about 30 grams of sugar in the whole can. I started using it when doing a low fat diet because there is very little fat it. I have the whole can, in a big huge mug that I microwave. I am so used to that it would be hard to give up right now. I hadn't planned on it, but was starving after a breakfast of one hard boiled egg and half of a really sour apple, so I had the soup around 9:30am. For me, I'm trying to reduce the inflammation that shows up in blood tests. I know losing weight will help me alot. Obesity is listed as a possible cause for the very high CRP levels in the blood. I do have arthritis pain as well. Darn! I'm going to have to think about the tomato soup. I have about 20 cans in the pantry.

Thanks Sherrye - I can have low fat or non fat dairy. I don't like coffee with low fat milk, usually that's all my sister has if I have coffee at her house. Stevia isn't allowed, depending where I check. I am not going to do this diet as strict as I did before because I couldn't do it for long. I think I may allow myself 2 cups of coffee once or twice a week. And I may add honey to tea at some point. I know it's an added sugar but I lost 50 pounds using it in 2018 and reduced the inflammation by more than half. I'm just seeing how the early days go. I hadn't been drinking coffee for over 10 years and just started again last year. I enjoy it, but don't think I am addicted to it yet.

2melons - I was glad to give you the ingredients. The toughest part for me is getting the cooking time correct. The cake gets really dark but isn't always done. Maybe do a trial run before your birthday using 1/2 of the ingredients to see what you think.
