Going to try a new recipe for a "grab & go" breakfast this coming week: Baked eggs in ham cups. At least they looked good in the picture.

I've done baked eggs in Canadian Bacon cups and also baked eggs in muffin tins with onion and bacon. Love them that way, as long as the egg is still a bit thick-runny and not overcooked and is left whole! Unless you're doing scrambled egg cups to reheat easier...those are ok, too.

You're welcome! Just be careful when you put the one cooked with whole eggs into the microwave to heat--pick the yolk in a couple of places with a fork before heating, or they could explode. Don't ask me how I know this, heh.

Err, that was supposed to be "prick the yolk", not pick...but I guess that kinda works, too. :P

I love breakfast! Some people bake up a whole muffin tin of the breakfast cups and freeze them for fast breakfasts. I think it's a great idea!
