Hey fs family, can we talk zucchini? A zucchini round up??

Have i told you lately how much inspiration and joy i get from looking at everyone's food and woe? It gives me great ideas about how i can continue to adapt my food and tastes.

The challenge: my roommate's sister gave me these two giant zucchinis from her garden awhile ago, and i need to do something (or several things) with them pronto.

Some things to know:
- Rm does not eat veggies of any kind, so i will be eating (or tossing) all of whatever i make.
- I basically do cico/flexible dieting, but fs has made me more aware of my macros, so i try to add veggies and legumes and mind the carbs as i am able. I eat meat but also love vegetarian.
- I love comfort food, especially this time of year. Soups, stews, casseroles.
- Stuff i can freeze is great. In addition to my being extremely lazy, i have ample freezer space (this house came with a full refrigerator-size freezer in the basement that they didn't want to move - score!)
- I try to do omad, so i freeze things in single serving or two serving portions.

So far i have thought of zoodles, baked breaded rounds, zucchini lasagna, or some kind of stew with the chicken sausage also pictured and maybe white beans. Also i love skinnytaste's zucchini tots but they are more of a production than i am up to today.

Any ideas?

I usually make calabasitas, which means little squash. Slice or cube squash, saute in pan with onion, add corn (or other veggie) and jack cheese until melted. I use pepper jack. Fast, easy and tasty.

With Large Zucchini - We grind it up into portions sizes to make bread with and freeze what we don't use. I have also just sliced it and grilled it with EVOO and garlic as a side dish.

I use a lot of zucchini . Zoodles are the best, with ground turkey and stewed tomatoes and of course parmesan cheese. We mix with yellow squash and onions also. Great just stewed. We are low carbers

You can make Okonomiyaki (savory Japanese pancakes) with any vegetable. I'd slice them into shoestrings, salt them to express some of the water out and drain, and then mix them with onions, carrots, cabbage, eggs, and flour, and fry them up into savory pancakes. Top with Hot sauce = awesome meal. :) Also zucchini bread is a favorite this time of year and it freezes well if you want to put part of it back for another time.

Use the first one and freeze the second. I'd rice it and portion it into baggies in 1/2 cup servings. Then when you cook other things down the line (like brown ground beef for tacos) you can throw in a packet of zucchini and cook it at the same time. It's an easy way to "sneak" in veggies; I used to do it with my kids all the time!

WOW!!! These are awesome ideas!! I seriously want to try all of them! @tahoebrun, i recently bought a cast iron stovetop grill pan that i haven't used yet, do i will try! @becc@, i never heard of calabasitas, but that sounds soooo scrumptious!!

@chris, when i was a kid there were several greek diners in town. They served the fries you are describing! Soooo delish with marinara sauce, i even liked them as a kid! Definitely going to try. @neversaycannot, that is one of my fave ways to eat zoodles! Ty @stumped! I like it that way too, but i have a lot more than i can eat in one or two meals, lol.

Also zucchini casserole is pretty awesome. My mom would make it every year around this time when we had a lot of zucchini from the garden.

@marx, your post literally made my mouth water. Some years I host a Hanukkah party and make zucchini or greens latkes in addition to potato just to have some alternative. Those japanese pancakes sound similar, and awesome!!

@socalpam, i literally did not realize i could freeze it raw. I am definitely doing that. What you describe is exactly how i cook and eat. I just try to sneak in extra veggies everywhere, lol, and i am always only cooking for me so i like if it is easy to just throw together.

I just made lasagna for supper last night and instead of noodles I replaced them with zucchini noodles. Yummm!!!!

I used to make sliced zucchini with ground turkey meat, o would season the meat with lemon pepper and add a tiny bit of hot sauce for taste. It’s yummy. Also if you like vegetarian they sell veg meat in crumbles so it’s about the same as the ground turkey. Zucchini I usually cook on the skillet sliced with olive oil pepper and tiny bit of salt and pinion powder. Then mix it all in together 😬

I had a wonderful dish when i stayed with a friend in Hamburg Germany. She fried up onions and Zucchini and wilted down some Chard. Then she added some cream cheese and a little heavy cream to the hot liquid and mixed everything together to form a sauce. Simple and really good as a side dish..

fried squash is delicious, as Chris said, or just boiled with a pinch of salt, or with chicken breasts, and little water(1-2 cups), 100 g of tomatoes and seasonings, it's how I cook mine 😀😋

Slice it up ... drizzle a little olive oil it with cracked pepper and sea salt on cookie sheet layer it with real mozzarella cheese bake at 400f for like 23min or till the top cheese layes is nice and bubbly!

I make a zucchini bake that I found in Cooking Light magazine. You par boil the zucchini then spray bottom of casserole dish, add a little tomato sauce, layer zucchini, cottage cheese and mozzarella... then sauce and layer again. On top spread sauce, mozzarella and sprinkle oregano. It’s delicious and very satisfying.

scoop the middle out and stuff it with just about anything! making bread with it is also yummy!

Minnestrone Soup! I hate zucchini, but love it in my minestrone soup. Here's the rough recipe, 2 T butter, 1 C chopped carrots, 1 C chopped celery, 1 med onion chopped, 10 ounces frozen peas, 1 (or two) zucchini's chopped, or sliced, 1 large can (with juice) Italian tomatoes, 1 can kidney beans (rinsed well before), 1/2 cabbage chopped, 1 T basil (dried, use more if you have fresh), 2 T parsley (dried, use more if you have fresh), salt and pepper to taste. In a large dutch oven or stockpot heat the butter and cook the carrots, celery, onion, peas, basil, and parsley for 10 min. Add the tomatoes, kidney beans, cabbage, and zucchini and fill the pot with water until it just covers all the vegetables. Heat to boiling and then reduce to a simmer. Simmer until all vegetables are tender. Add salt and pepper to taste, ~1.5 t salt and 1/2 t pepper for me
