Did all my workouts. (Go me!) Going to fast until 6. Then i am going to have a bigass salad with smoked salmon and a bunch of other stuff. Would love some eggs, but the ones i have are like 3 weeks beyond the sell date. Not sure i am that adventurous.

Fill a deep bowl or dish with cold water and place the eggs inside. If they sink and lay flat on their side they are very fresh(doubtful if past the date). If they are on the bottom but stand on the end pointing up they are still good but probably won’t have a very rich flavor like very fresh eggs. If they float to the top toss them out because they are bad. I believe it has something to do with the egg shrinking as it ages and more air gets in the shell through the tiny pores. Older eggs means more air which means higher in the water. We do this often when we aren’t sure if the egg is fresh or had been missed a few days.

Oh also, if you aren’t boiling them you can break them open. Do so carefully. If the yolk is not intact(and you didn’t accidentally break it when you broke the shell) it’s not a good egg. Also if there is a smell or odd color then it’s bad. If ours float even halfway in the bowl of water I toss them. I only eat them if the bottom of the egg is on the bottom of the bowl or close enough hat I can’t put my finger between it and the bottom. I generally use my clear mixing bowl that’s 6-7” deep or the pan I plan to boil them in. Clear dishes are much easier to tell freshness:).!

Feels good to hear how you crush through with high power. Peeperjj share great knowledge on our eggs. Much appreciated.

"Expiration Date:  The “sell by” or “best if used by” or “exp (date)” are all expressions used by the industry in various states, and are used by the retailer to assure freshness.  The egg will continue to be fresh for at least another 2-3 weeks if it has been refrigerated from the time packed until used at 45 degrees F. or lower.  As the egg ages, it does lose some of its qualities, so if you were baking a cake or whipping meringue, your cake might not rise as high as expected, and you might not get the volume of meringue you would expect, so for baking purposes it is better to use a fresher egg." https://whatscookingamerica.net/Q-A/EggsSell.htm A lot of food is good well beyond sell by dates. Don't be wasteful. So much work goes into producing 1 egg. peeperjj's egg test is easiest/best way to tell freshness, thanks for sharing!

Thank you krumpe! I always feel terrible throwing food out, especially animal products. But the dates are confusing. I appreciate the explanation and will refer back to this entry!
