Quinoa Cauliflower Buffalo Bites

Spicy snack packed with quinoa, cauliflower, chicken and cheese.

Ingredients

Directions

  1. Spray pan with cooking spray and cook chicken. Add some black pepper and salt to taste.
  2. Add cauliflower and cook until it softens.
  3. Add already cooked quinoa, until mixture fits your preferences.
  4. Transfer mixture to a large mixing bowl. Break egg in separate bowl or cup and mix with fork until yolk is broken up.
  5. Add egg, cheese, buffalo sauce and some breadcrumbs and mix. Add more breadcrumbs as needed until consistency is not runny, and you are able to scoop.
  6. Spray muffin tin with cooking spray and scoop mixture into cups. Cups should be about half filled.
  7. Bake for 20 minutes until quinoa is crispy on bottom, but not burnt. Let cool a couple of minutes before serving.
  8. Tastes great with non-fat Greek yogurt sauce mixed with dill and honey.

Recipe doesn't state, but I'm guessing that the cauliflower should be chopped before adding to chicken to cook?
