The drop is coming - I can feel it. Have a super Sunday everyone! Brunch - 1 fried egg with baked zucchini fingers - great recipe - subbed 1/2 the almond flour for ground pork rinds. Breading: 1/2 C ground pork rinds 1/2 C almond flour 1/4 C parmesan grated 1/2 tsp granulated garlic 1 tsp crushed dried oregano
1.5T Avocado oil 2 Large egg whites
2-3 zucchini - depending on size (I used 4.5" of the bottom end of a large zucchini that was leftover in the fridge).
preheat oven to 400, whisk eggs & avo oil in 1 bowl, mix breading in another. Dip zucchinis in egg mix, then breading, place on parchment on cookie sheet - bake 15 minutes, then broil on middle oven rack for 3-4 min until golden and crispy.
TIP - mix the left over breading & egg mixture, spread very thinly in a hot frying pan and let cook until done one side, flip and do the other - a wrap has been made and there's no waste...
