Planned ahead yesterday and did well. I'd give me a B- cuz I caved and had the cupcake. Today I made a beautiful salad and planned my favorite breakfast. I have some juicy sweet tomatoes and will have those again for dinner. My root vegetable share is piling up, so I will make some soups tonight and freeze them in portions so that I can grab and go. Also made some nice little corn muffins with jalapeno peppers and cheddar cheese to go with the veggie soups. Living alone means I have to really get food proportioned and frozen into meals to keep everything from going bad. My aunt had a plan that worked and I am going to try that this week, which was to have a marathon cooking day each week and putting meals together for later. Have a great day!
