I have been trying to tweak my food so that I am eating fresher, real foods. I have a friend who has lost 60 pounds since last year who is always hungry - looking at her food intake and mine, I have to keep reminding myself: more veggies, less commercially-processed food.

Then, my daughter is vegetarian and I have vegan friends who eat really healthy food. So my plan is to work toward cutting out the breakfast bars unless they're home made, and cut down to maybe one or two servings of meat a week. I baked some killer oatmeal bars so those will go on the breakfast list, and when those are gone I will go back to the granola I baked last month which was also very yummy. Either one with yogurt is a nice breakfast.

I find that I like vegetables, raw and cooked so that will be easy. The only downside to vegetarian eating is the time involved in vegetarian cooking, but I think I have to prep once a week and go from there.

Snacks: this week's focus is zucchini. I had a couple at work with a limited amount of spinach dip. Tonight I will steam some with mushrooms and then use that to top a potato which I baked on Monday when I was stuck home in the snow.

Cook up your vegetarian recipes over the weekend and portion out the meals into Ziploc freezer bags and throw them in the freezer. Take them with you in a lunch bag and whenever you're ready to eat, just pop 'em in the microwave. :)

Read The Starch Solution, by John McDougall, MD or any of his writings or website. He likes to refer to us as Starchivores!!! So even though, yes, as a vegan you may be eating more veggies that rice, potatoes, squashes, whole grain pastas are an integral part. It's what I've been playing with these past few weeks ... so much better than a DIET for me ... a change in lifestyle and I LOVE MASHED POTATOES and vegan gravy!!! LOL!!!
