BuffyBear's Journal, 02 May 11

I know tornados are old news but we traveled to see family in Sanford, NC yesterday and got to see first hand the tornado damage. Seen it a zillion times in pictures but nothing like up close and personal. So, please, send my rain without tornados. Thank you.

As for exercise - Yesterday was my day off. Looks like today weather and work schedule will allow me to get my 40 min. walk and few reps of Office Exercises as well. Tonight will schedule floor exercises (not my favorite).

And if anyone is checking up on me, last night I baked two of Sandy's spinach breakfast pies (so can get my breakfast veggies). I have to make 2 because DH (who is not on a diet) loves them too.

Happy Monday to you all.

Morning Buffy. It is so terrible the destruction that the weather is causing worldwide, glad your family is safe and sound. Glad to see your May has kicked off on the right foot and your exercising is on schedule. I don't exercise on weekends, and need to get my bum into gear for a bit of a workout tonight, as today has been a Bank Holiday, so feeling lazy. Always good when DH likes our diet food, makes life a whole lot easier. Mmmm spinach pies sounds yummy - how do you make them? Have a great Monday ☺

Happy Monday, Buffy! Glad u checked in because I was checking up on you! ;-) JKJK. Pictures on a TV screen can not even begin to help us understand the carnage of these tornadoes :(. I just hope we all donate something to the charity of our liking... even if it's $5! These people literally have NOTHING now. Imagine only being left with the clothes on your back? I shudder to think... sigh. Spinach pies sound delish! Enjoy your day!

Hola Buffy! I so feel for those people who were hit by the Tornados. My thoughts and prayers have been for them and their loved ones Would love the recipe for the pies! Morning, Buffy....I am still praying for those affected by the tornadoes. My dad's family is in NC and my nephew is stationed there, but they were not affected by them, thank God. Your breakfast sounds wonderful. Have a great day!

Aren't those great? One of the comments on the recipe said that person's husband liked them too, and they're good eaten cold, as well. My first ones I made with those great big ol' spinach heads, but after rinsing and rinsing and rinsing and rinsing, my next batch was made with baby spinach in a bag! Good work on the exercising - you go girl!!!

Happy Monday to you too! Pictures of the storm damage are bad enough, I know I can't imagine what it would be like to see it up close & personal. My prayers have been out there for them. May is a great month to start anything, especially excercise! So, where is the recipe for the pies?

Happy Monday after noon Buffy, Sounds like that spinach breakfast pies are good. May have to check it out. Oh and I know what you mean about seeing all the tornado damage is in person. My friend and I went Sam's and it took us over 2 1/2 hours to drive 40 miles. and they wouldn't let us turn around and go back the other way. So went went on and had the same drive back as the traffic was horrible. The interstate and side roads were just full of debri. We would have never went if we knew all that was going on. Been praying for all that has been hit by these bad storms.. have a good evening my friend.........Bren

Tracy & Bren - Sandy's spinach pie is made with cottage cheese, so I know you wouldn't be interested. It is just a crustless quiche and makes a yummy breakfast on the run. I can sneak a little dairy and still be OK. Maybe you could find a cheeseless recipe.

Yep I'm checking on you too... albeit a bit late in the day. Congrats on the weight loss! My nephew went to college up in that area and knows many that were affected by the tornadoes, our church is organizing a shipment of clothes, food, water, essentials, and money to be driven up by volunteers this week. I truly feel for these people and hope they can rebuild their lives. Have a great evening! GB

Weirdangel & Sexynonna & Gg-girl - I just added the recipe to "My Recipies". But I have substituted regular cottage cheese, green onions, 5 eggs, frozen chopped spinach, sharp cheese and added sprinkling of bacon or sausage crumbles. It doesn't matter how you make it - it comes out good. Thanks again Sandy

AuntieJan - Nothing wrong with late in the day. Hope you are doing well.

Sandy - as you can see I've murdered your recipe. I change it up each time but it is always good. Maybe next time will use the big leaves, feta cheese and italian sausage and call it dinner.

ctlss - glad to hear your family was safe.
