Noted some members are incorporating pumpkin in their diet. Pumpkin is another nutritional POWERHOUSE, High in fiber and POTASSIUM . It has a positive effect on both Blood pressure and blood sugar. It’s positive nutritional effect are also found in the seeds and in the leaves of the plant. Do a little GOOGLE on the medical and nutritional properties of pumpkin. I include pumpkin seeds (pepitas) in the granola that I make and eat everyday with my yogurt. Small, consistent positive changes in your diet are as important as making small substitutions or deletions from your diet.

I heard several times that one cannot make a good soup without at least a little bit of pumpkin.

Also check out the many different winter squashes out there. Must are also extremely nutritious. I know many are so afraid of the CARBS but you have to pay attention to the other nutrients that a food item brings to the table. I find that including smaller amounts of all different types of foods does help with that. With so many restrictive diets that eliminate entire food groups there is a risk of nutritional deficiencies. You have to look at what you are eating from a critical perspective. For women, one of the big issues is not getting enough calcium. Your body then leaches it from your bones and you are at riskt for osteoporosis .

Yay, pumpkin season! It's the season of orange, yellow food.

Pumpkin ravioli, pumpkin bread, roasted pumpkin, dehydrated pumpkin chips. Lastly pumpkin casserole, Pumpkin seeds...Sorry, siesta time, after housework. A bit bored. Just finished my day. Soup day. No cooking. Yay.

I've just read that pumpkin has more nutrients than butternut squash (which I love) and less carbs - perfect for me! People should be aware that the best pumpkins to eat are labeled "for pies" and are generally much smaller than the jack o' lantern variety.
