Hanging in there with counting calories! Yeah!
Went to coop last night and had a great meal. Yum. All vegetarian, and I think maybe totally vegan: sweet potatoes with vegan marshmallows, chickpea patties, steamed kale, polenta with jalapenos, and meatless chili. Dessert was banana chocolate pie. Yes - all vegan.
My plan is to make my dinner for coop completely tofu-free. Not that I don't love tofu: I do love it. I just think I can do vegetarian without it. I have some good inspiration from this site so if you don't mind I will run my menu-planning by you all over the next couple of weeks to come up with what I am going to cook.
Saturday night my dance partner Woody asked me out to dinner on Sunday. So, we had a date set up. Later I realized I had coop and couldn't make it for dinner, so I said I could do lunch. He couldn't do lunch, blah, blah, one thing after another, finally we had to settle on NEXT Saturday to go out. He was crestfallen - so sad there was no date for a week! I have not seen anyone so happy as he when I reminded him there are two contradancing nights between now and then! He is a sweetie. Again, can't believe my luck as so far. Funny how chemistry makes things work - when I showed my daughter his picture, she said "I wish I could find it somewhere in my brain to be able to say 'he is cute' but I just actually can not." lol! Looks are not everything, baby girl!
Keeping calories at appropriate levels seem to enhance my taste buds - I have some leftover teriyaki chicken for breakfast that smells like heaven! (How can the spell check not know "teriyaki"???)
