Beautiful! How about Caprese Salad or zuchinni noodles with basil pesto or coctel de camaron? Mash the potatoes and freeze them in 2 cup portions for soups in the winter...like clam chowder, creamy cheesy potato soup!

I like to make what I call chili eggs. For two I would use 3 tomatoes cut up, 1 onion. With a small pat of butter or a bit of your favorite oil in the bottom of a frying pan add tomatoes and cut up onion. The tomato will turn really saucy, you want to cook until almost dry. Add about 3-4 T, yes tablespoons of chili powder, while you are cooking down the tomatoes and onions. You want it pretty well covered with chili powder. Stir occasionally until it is almost dry. While you are cooking down the tomatoes, get out two plates and tear up a flour tortilla on both of them. You want fairly small pieces. Check tomatoes and onions, when almost dry and make a well/open spot, add 3-4 eggs and start to scramble them in the pan. Once well scrambled and starting to cook, incorporate the tomatoes. then top with cheddar cheese. I like to use sharp cheddar cheese, but you can use what you like. Once cheese starts to melt, the eggs will be done. Remove from heat and serve on top of tortilla. Stir together. If you don't cook the tomatoes down until almost dry you will end up with very soggy tortillas and they will tase terrible.

Another thing you can make is what I call french swiss steak. Take a flat roast or if you can find one or ask for one, a nice round steak. You used to be able to find them, maybe even a chuck steak. Place win roaster. quarter and place squash/zucchini in a layer on top of of roast. Then cut up your onion into chunks and add those around steak. Add about 1/2 bag or 1-2 cans of peas with juice. Dice up several tomatoes and top with that. Add a small amount of water. Cover and bake at 300 for about 2-2.5 hours. Steak should not be tuff but almost falling apart. Very tender. There will be lots of liquid by then, pull out steak and veggies. Make gravy out of the liquid if you want.

If you have a food.bank in your area I know they would eagerly accept what you can’t use. There are an unbelievable number of hungry people out there. Hubby did a great job. They are beautiful.

I make alot of zucchini boat dinners, u can use summer squash same way. Italian and enchilada boats are 2 of my favorite!

Checkout the Supercook website. You plug in the ingredients you have on hand and it pulls up recipes you can make with what you already have, and gives you a list of ingredients you need if you're missing any. You can filter by what kind of meals you're looking for (meal types, dietary restrictions, by cuisine, etc.). Especially handy when I'm short on funds and can't afford to go grocery shopping. There's an app too.

squash casserole with jalapeno pepper ingredients (personal favorite) make "zucchini bread" in scanning jars (sounds weird but it is doable and gets you small portions ...lol you eat a whole small cake instead of a huge loaf. and don't make the mistake I did first time... USE WIDE MOUTH JARS... the crumbs were tasty though. dehydrate the tomatoes for soup n stew ( takes up less space) can the potatoes. dehydrate some too. nice haul. my garden went badly. but then I am no longer in the south( throw it out the door and it will grow where it lands if the critters don't get it first) I am in the high desert. the 115 degrees the other day decimated my acorn squash so I saved the immature fruits for stews this winter and tossed the vines. I save the pumpkin babies too they make a fine soup.
