Happy Monday everyone. I am grateful that I continue to have opportunities to learn and grow. I tried a new recipe that we found on the food network. it is for a brussel sprout version of a potato latke. we switched out carb quick for the flour and used whole eggs instead of the egg whites (just to keep things simple) as the binder. We also found a 4 bone prime rib and the local store on clearance for $30 - what a deal. 4.5 hours on the BBQ/Smoker to medium rare perfection. We turned those into a great meal that was really good and kept the carbs low. It is in my cook book and on my diary for yesterday. The sauce for the Latkes was sour cream and mustard. Take that pancreas - you're not the boss of me...well kinda, but not the point. It was a real treat after getting all the decorations packed away. I hope you all find a way to learn something new on this journey we share.
