It’s been a minute!!! Sea scallops over zucchini spirals. Zucchini cooked in avocado oil butter, pesto and a dab of sour cream 😋

Ground golden flax, sea salt and pepper also cooked in the zucchini. Scallops cooked in avocado oil butter, garlic, basil, sea salt and pepper and a drizzle of beer to cook off and makes a beautiful sauce. Golden ground flax sprinkled on top.

Thanks Jen💕 looks fancy but super easy🙌😊 green giant zucchini spirals, microwave then add to a hot buttered pan of pesto, add in sea salt and pepper and that’s it. Tonight, was the first time I mixed in sour cream. Scallops are super simple and come out beautiful with just a few ingredients.

Looks yummy! I cut my own zoodles, then add them to sauce for 2-3 minutes before serving. That way they don't require a separate pot.
