Chicken Coconut Curry. This was the first time I’ve ever made—and eaten—any type of curry, and it was delicious! It took me some time to do it, but I finally did, thanks to all of you for your cool recipes and photos. #lovingFSfood!

Curries are sooooo yummy. Yours looks wonderful. I make a Shrimp Red Massaman Curry where I sub PB2 (powdered peanut butter) for the peanuts/peanut butter, sub stevia for the sugar, skip the potatoes, and use lite coconut milk and cauliflower rice. I finally have the calories down enough that I can eat more than 4 tablespoons, so I make it often. I also love yellow curries. Greens are my least favorite, but I'll still eat them. It's a curry!

#curryinahurry I am cooking more at home and I love types of curries: Chinese/Vietnamese , Japanese, Thai, and Indian. 😋😋😋 your dish looks wonderful

For spicy Thai curry I use Mae ploy red curry paste and roughly follow the recipe on the back. For Japanese curry I use s&b curry and follow the recipe on the box. Indian I look at recipes and use the ingredients but adjust to my liking.

@Princess - It's not bad. Like stir fry, it's more about the prep than the cooking. You have to have everything ready to go for when the pan is hot, so make sure all the veggies, extras (like coconut milk, sugar, peanut butter, chicken stock, etc.) and meat you want to use are ready to go when you heat it up. I, personally, use pre-made curry pastes from a company called Mae Ploy. They're in the Thai section at the Asian store I go to. I think they're pretty tasty. But if you prefer Indian flavors and spices, you might want to look at a store that specializes in Indian instead for the spices and/or pastes you need.
