I was the recipient of about 15 pears that were ready to eat so I made two small sized tube cakes, One to eat and one to freeze for me, and a big one for my wonderful neighbors for a party they are having as soon as they return from an unexpected trip east. I got all their grocery shopping done with the help of some nice Indian ladies in the Mediterranean market. I think we are ready. Off to water their plants. Oh yes, no sugar in this cake. I used SWERVE. I’ll update and let everyone know how it is. My neighbors have the same issues I do— lots of friends and family with diabesity..

Na 7, fat 13.8, carbs 16.37, fiber 1,5, protein 2.88, calories 190.

Again, no sugar added to the recipe. SWERVE was used and it has no calories and has no impact on BS. My Goal when I make treats is always to use portion control and moderation and to LIGHTEN the dessert without sacrificing the essence of the recipe. I set this cake up to serve 12 people. I’ll alter the servings if needed. I also cook or bake to the number of people I am serving. I do not plan for significant leftovers.

Ok— this recipe is another keeper. It was delicious.

How wonderful, what you have done for your neighbors, and your concern to take into account their suffering from diabetes, and not add sugar to the cake. Looks great 😋. I also want neighbors like you.🙈😍

Safa— my neighbors are not diabetic themselves but all their family and most of their friends are (just like in my world) so when I help her bake I do things that are lower carbs and calories, not perfect, but better.
