I just do it over the stove bringing it up to a boil. Also made it over a campfire or two. Coffee in the bottom of the smallest pot, sugar if you must, cold water on top, this is the only time you stir. Bring to a gentle boil until it foams. Doesn’t take long. If you like the foam, it’s not quite the same as crema, spoon it into your cup, then pour the coffee into the cup. No stirring. Here’s the art: people add spices, cinnamon, cardamom, what I’d call gentle spices. Add them at the beginning, with the sugar, but with a light hand. That’s it. If you have a great international grocery store, there’s a mix of spices that is lovely in coffee but all I’m remembering right now is a brown label with something like “coffee spice” on it. Most of the time, I go with cinnamon since I have it here on hand all the time and it tends to sweeten the bitter. And yes, I do like my coffee. Quality over quantity and never from a pod if I can help it.
