Tonight was a clean out the refrigerator type dinner— cut the brown spots off of the cauliflower, mushrooms weren’t tooo awfully fuzzy and I was able to resuscitate the Mexican green squash without too much problem. Ended up making. Bow tie pasta with roasted cauliflower, sautéed onions, squash and mushroom. A squeeze of Myers lemon. I didn’t have parm cheese but had some only mildly dried out shredded mozzarella that I threw in just before serving along with some parsley. Also baked the last few pieces of bacon and crumbled it on top. My boyfriend of course had no idea what it was and he knew I had just gotten home from school so he was super impressed and we ate the whole thing. Now he is looking forward to having it again— I will never be able to recreate this dish it was that good.

This was a long school day so didn’t have much exercise- hiking early tomorrow morning then have to sit around and wait for the delivery people to bring my new dishwasher—- which I now have a whole new appreciation for since we have been doing the dishes by hand for a week.

I love those kinds of meals; I always feel like I'm in an episode of "Chopped", LOL! I love those Mexican squash, too. I slice them and saute in a little garlic butter; delish.

I often make those kind of meals. Had to Google what Mexican green squash is as we don't get it in the UK. Sounds good. Hope you like your new dishwasher.

I love these ones .. I'm on a mission now to make lettuce and spinach soup with scallions before they become unuseable. This is a great combination you pulled together!
