This Sunday is filled with sunshine and snow on the ground! A nice change from the green and rainy days that we usually experience here on the westcoast.

Tried to make some recipes yesterday and neither of them worked out. One was my chicken cheddar broccoli - the broccoli turned out extra mushy which I can not tolerate - the Parmesan clumped up and the consistency was awful - the chicken cubes were dry and tough. WELL I know I am not a great cook, but geez!

The second concoction that I attempted was Pork Sui Mai dumplings consisting of pork, shrimp, water chestnuts, sesame oil, ginger, garlic and green onion. I love the ones that I can buy from Hon’s restaurant (they sell them at Safeway frozen and you can just pop them into the steamer) However, I am avoiding the sugar and wonton wraps that the restaurant uses.
I usually use raw shrimp to add to the ground pork but the supermarket didn’t have any so I opted for the precooked shrimp pieces at the deli. The supermarket also didn’t have Chinese mushrooms so I swapped them out for oyster mushrooms. The result was a really fishy tasting dumpling without the sweet snap of the Chinese mushrooms. YUK. I ended up freezing the remains in order to tweak later in some way.

All in all I attempted to switch it up by getting back into cooking from scratch but was really disappointed in the results. Now today I am only going to stick with the tried and true and embrace the bland!

And still – the scale remains stuck with a slight increase heading into my 2nd week of no movement. Stupid body!

Hehe, I can relate to messing up recipes, it really pisses me off! My wife and kids will say its good, while I am fuming and disappointed. Lately I have been hitting home runs on the cooking front with hummus (real easy), and homemade pita chips (cut em, coat with olive oil, salt, bake). I also have gotten a veggie stir fry down pretty good. Yes, I repeat it over and over. Perhaps because I am afraid of messing up. Those dumplings sound tough to make, so don't be hard on yourself. Asian food is probably my most dangerous area to mess up in. The thing about cooking is keep trying. Sometimes I make great food by accident. Last thanksgiving my 16 year old daughter made the best gravy ever! And she cannot repeat it, lol. Just keeping hanging around here and doing the right things, the weight loss will come.

Thanks for the support! I can relate to your daughter - some of the BEST meals I prepared I couldn't tell you what I did exactly. Still ate the dumplings though...just drowned them in more soy sauce and drank an extra glass of water to compensate for the extra salt. And I will try again - I love cream sauces so I cheated and bought those Kraft shredded blends of cheese - stick to what I know until I just can't eat it anymore is what I say. I am totally into making Alfredo sauce with a touch of curry (like half a teaspoon) to pour over my chicken or seafood! I have made some revisions to my diet such as no more alcohol and diet coke at night and expect the scale to drop - already has... Nose to the grindstone! cheers
