Can somebody help me? I keep reading about this periodic fasting but I cannot figure out how it is supposed to work/ how often should on do it?

Comments 
Intermittent fasting means limiting the hours in the day when you choose to eat. For example you may choose to eat only between 12:00pm and 6:00pm each day. Your fast would be 18 hours each 24 hour period - and much of it would be asleep.

Thanks!! That's interesting: is this consistent with other dietary requirements- such as low carb high fat or other- or does it work with any diet? And what are the benefits?

It is a great help with most diet plans, but easiest with low carb plans. Check out Dr. Jason Fung on YouTube. He explains how it works, and the science behind it.
