My legs have been stiff the past two evenings, and also a very slight headache and light nausea. Carb macro way up is likely causing inflammation. Pulled out my copy of "The Wahls Protocol" and started leafing through it.

I haven't actually read it because I heard her speak and follow her on facebook, listened to her TED talk, and watched her on Youtube, so I know she is spot on. I feel if I actually READ it, I'm accountable for it.

Anyway, the first thing she says is vegetables! Okay, I'm on board with that. I am on a mission to eat more of them. Then, later in the book, in a chapter titled "The Wahls Diet," she says number one is to ELIMINATE gluten and dairy. I'm like NOOOO!!

I won't be skipping ahead anymore. I need to go back to the beginning and reread the forward and introduction.

It could be the body making some basic adjustments to your new diet. Your diet plan is good "clean eating, No sugar". While clean eating can use better interpretation, NO SUGAR is loud and clear and that's a great start. As you progress, you will continue to scale back on food items and get what you put into your body daily, down to just a few simple basic, whole food items, and learn that water is the only liquid that does a body good - and your body will continue to adjust (growing pains perhaps).

Ahhhh... the dairy and gluten. Gluten especially kills me, mind , body, and spirit! It can be soooo hard when the things you love soooo much don't love you back! Believe it or not, the things that are the worst for your health are actually the things that you crave the most. That's what makes it really suck! One thing at a time, hun, don't overwhelm yourself. A step forward is still a step in the right direction! ;)

...and as in worst for your health, I mean having an unknown intolerance/allergy to. As far as bread, biscuits, and such... try googling recipes made with almond and/or coconut flour. Don't give up after you try the first one. Each is a little different, and tastes a little different. I also replace rice & potatoes with cauliflower. There are lots of great recipes out there. You just have to be diligent.

This is just me and I am not giving any suggestions or advice, but when I finally let go of dairy and all grains - I felt terrific and lost weight, too. No more joint pain or inflammation. You might enjoy a book by neurologist Dr. Perlmutter titled "Grain Brain." Best of luck in your plan!

Second paragraph of the book and I found a loophole: "Always consult your health care provider to discuss your personal diet and nutritional needs and have these concepts adapted and personalized to your circumstances." He he. Seriously, I am down to two pancakes and four biscuits a month,, but not ready to go all tbe way, yet.

Cool! You never know if you like it or not until you try it. May favorite biscuit recipe: *preheat oven 400 *lightly grease pan *beat Well 4 eggs, 5 tbs of real butter, dash of salt, 1/2 tsp baking powder, 1/3 cup coconut flour. *spoon 8 lumps on pan *bake 12-15 minutes, until tops tu rd n light brown. Easy peasy!

Coconut flour and almond flour are alternatives to wheat flour, which contains gluten. Gluten sensitivity is more and more common these days.

I baked biscuits tonight using organic wheat flour. I was thinking of them all day, and they were lovely. I really want to try your recipe next time.
