Matzo, matzo ball soup, brisket, and the rituals surrounding the story of Exodus. Bitter herbs to remember the harsh journey from Egypt to Israel 3000 years ago, salt to remember tears, a dish that looks like mortar to remember making stones as slaves to Egyptians. It's ironic that we celebrate freedom and establishment of the state of Israel over 3000 years ago as we face yet another challenge to our existence, largely by people who neither know or care to know history. So it repeats itself.
