I pair starchy food with high protein and fat. Less insulin spike. I also only have 1/4 pot or 1/2 at most w a meal. I’m type 2 diabetic and manage it through food now. No meds.
Also, through this app someone, (I believe it was Crystal), taught me if you let starchy foods cool completely after cooking, it reverses the starch which causes A LOT less of a spike. (Also Health Coach Kate from YouTube)
I bake my potato (or microwave) it, let it cool over night, then cut into fry shapes, spray w olive oil or avocado oil, add Himalayan salt & pepper, and re-bake until crispy!
