Well I survived another food-centric holiday. Had a great day with my family. My daughter, her husband and my granddaughter spent the day with us. I roasted a huge turkey with stuffing and gravy, peeled, cooked and mashed 3 lb of potatoes, cooked a batch of fresh string beans with bacon, baked dinner rolls from scratch along with a pumpkin pie. However, I walked nearly five miles in the morning and only ate one meal during the day. Limited my plate to skinless turkey white meat, green beans with bacon, sliced tomatoes. I tried a small portion of farro that my son-in-law prepared and I did eat one of my dinner rolls with some butter. For desert, I baked myself a pumpkin pudding that came out surprisingly delicious. Tasted just like pumpkin pie, but all it had in it was canned pure pumpkin, egg beaters, splenda, pumpkin pie spice and a pinch of salt. Baked it for half an hour and it made a great pudding. Kept my total calories under 900 for the day. Next stop, Christmas. I already bought the ham, and I have a great supply of sweet potatoes that I grew this year. Yum.
