When you finally can eat! Large Cobb salad with mayo-Italian dressing.

I’m not sure I’m sold on the dressing…but aside from that, I could destroy that salad! 😋

I love my homemade dressings, and most if not all use mayo, so it was an easy jump. Hubby said it improved the Italian dressing, which he no longer likes due to excessive amounts as a child. The mayo toned down the vinaigrette taste, but it did need a bit more flavour to it. Next time I'll add a dash of Italian seasonings to see if that helps. And I did destroy it, lol. My body was like, WHOA FOOD! And although the nausea came back for a bit, it subsided quickly.

Homemade is generally better. 😋 I did have a salad that someone else made recently that had thousand island dressing on it. It’s been a loooooong time since I’ve had that flavour. It was an interesting change. I generally just stick to olive or avocado oil and either balsamic vinegar, apple cider vinegar, or a berry infused vinegar as my lazy/easy go to’s. It is good to bounce out of the normal routine once in a while 😎

While my kiddo usually balks at vegetables, I can get them to eat (and ask for) Cobb salads. But they eat it without any dressing at all. Unless mine has tons of cucumber and tomatoes, I need something as a liquid on it. I don't like balsamic and never tried ACV on salads, though it's in many of my homemade dressings.
