Okay I am legit proud of myself today. I leave for vacation this morning but have been worried about weight gain during this time for obvious reasons. To avoid fast food, I’ve meal prepped (and weighed and calorie counted) tons of food for the road 😄

Pictured: turkey slider sandwiches, fruit salad, mini pizza rolls (with turkey pepperoni), egg muffins (Italian and western style), “low calorie” cookies, and “low calorie” brownies. I have been cooking for two days straight but totally worth it!!

Erin loves pink, Thanks, and totally! For the egg muffins I used this as a guide and made modifications to suit my taste. I think for the eggs I did 6 with yolk and 8 without yolk but this was a few weeks ago so I don’t remember for certain. https://cafedelites.com/breakfast-egg-muffins-3-ways/ For the cookies, fair warning: Choose your brown sugar substitute wisely!! I unknowingly used the kind with erythritol which your body can’t digest so it can cause major stomach issues. They tasted good but we noticed the effects.
