Did you use a recipe for that soup? or was it your own creation just put together - I am very much interested in any bean/legume entries - trying to walk away from the animal proteins - a bit of both --- that looks good.

No recipe on this one to speak of. Pinto beans, broth, carrots, onion, celery, mushrooms and kale. Garlic, cumin, and turmeric for spices. I threw the kale in only for the last half hour, because I didn't want to overcook it. You could always simplify life by using canned pintos. The onion/celery/carrot combo is a really common thing in soups. The mushrooms went in because I had some I needed to use up before they went bad. I'm afraid I rarely have actual recipes! 🙃

Kenna, natna -- my mother taught me to cook, and she didn't use recipes, so most of what comes out of my kitchen is an accidental recipe 😊

Black beans work too, Xuxugigi! I really love greens in my bean soup in general. I particularly like collards, but can't always get them. In a pinch, frozen spinach works well. I'm trying to work more greens into my diet. And yes, Losingtowin, it was tasty and filling!
