How nice to have Saturdays off - work has been making me dizzy lately. But I had another good day of eating yesterday, although not recorded. To Lizzy: Will record every bite starting today - I promise.

As usual, I have got to go grocery shopping - BORING! But DH has asked for meatloaf tonight (made with grated zucchini instead of bread crumbs) so will be happy to oblige. It is always nice to be able to eat the same meal.

So food choices will be good today. Tomorrow - not so good. We are invited to an Easter Brunch and I'm not up to bringing my own food. Got to "pick your battles" and this is not going to be one of them!

But Monday is a fresh start, and with your continued sending of Mojo, I am ready. Thanks again for all your encouragement!

Having Saturdays off, is a blessing, and for me, this will be the first Saturday, in months, that I don't have anywhere to go, or anything to do, other than chill out. It's actually going to be a beautiful day outside today, as we've finally gotten the Spring temps we've been waiting, and praying for; but other than taking the dog out, I won't be setting a foot outside, for anything. Meatloaf with grated zucchini, sounds good; I never considered doing that, but will, the next time I make one; thanks. Easter won't be carb free, for me either, as, like you, I'll be going to a brunch, after church, with some friends and relatives. But, as you said, thank God for a fresh start on Monday; and getting that Mojo back! Have a Happy Easter, and a successful Monday, of getting that Mojo back; and working our way to victory. :-)

Buffy, great job with the food. Sorry that work is making you so dizzy. I don't mind grocery shopping...it is probably the only shopping that I really like. lol I love meatloaf. We no longer add anything for filler, just use the meat, the sugar free Heinz ketchup, onion, green pepper, egg, salt, and pepper. It is really good, and low in carbs. How much zucchini do you use for the bread crumbs? I have never heard of that and it sounds awesome, especially since I love zucchini. Have a great Saturday and blessed Easter! Hope they have some great low carb choices for you to choose from.

Stef - The zucchini and 1 egg seem to hold it together and keep it moist. Unfortunately, I never measure anything but I'd estimate no more than 1/2 cup pound grated (fresh) zucchini per pound of meat. I have packets of zucchini in my freezer that measured 2 cups when fresh (of course they shrink when frozen) and I use about 5 pounds of meat.

Hey Buffy! happy saturday! I LOVE meatloaf! My mom asks for it when I go to her house, so I have it about 4 or 5 times a year:-) It is really hard to record everything when you are busy, I totally understand! I'm just doing the nudge nudge thing:-) Hope you have a nice time tomorrow! I don't do easter, but my neighbor invited me and I was in a tizzy on what I was going to do/eat! I finaly spoke to her, and she totally understood, so I am going to bring some of my own food:-) I have never done that before, but I know her pretty well and she knows how hard I am working. If it was anyone else, I think I would have canciled. Which reminds me, ug, i have to go to the grocery store before they all close! At least walgreens is open tomorrow (and my gym LOL!)... Happy easter to you! Peep Peep!

Five pounds of meat in a meat loaf? Thatsa some bigga meatloaf!! LOL! Actually, the zucchini in it in place of bread crumbs sounds like a really good switch...I'll have to remember that one. Hope that brunch is filled with lots of egg/omelette kinds of goodies! Happy Easter!

Sandy - makes two bigga meat loafs! One to eat, with plenty of leftovers for our lunches. The other one goes in the freezer as they reheat nicely in the microwave. You have a great Easter as well!

Ruth - Don't think my weekend will be as exciting as yours but at least we'll be spending it with friends and family. And the fact that this is the first time in many years that it is NOT hosted at my house is a big cause for celebration.

Buffy just nice to be able to take a day off I am off today for the first time in a few weeks. I agree pick your battles with food we are all so hung up over it. We all have our demons. But enjoy your weekend with friends and have fun Happy Easter.xx
