When I lived in lower Manhattan, I passed an Italian deli every day. They featured Caprese made with roasted red peppers instead of tomatoes. Since I'm not a tomato lover, that's the way I make this at home. I'm avoiding dairy but, for this, I'd make an exception!

Miraculum, the only way I eat caprese is with roasted peppers, don't care for those pinkish things they call tomatoes sometimes...and actually, that is how we ate it growing up in an Italian family in Philadelphia....and the peppers were never from a jar!
