The sun is trying to come out this morning. We had a sleet/freezing rain storm last night and I am itching to get out of this house so - Come on sun and melt this icy mess!

Note to self - while reviewing our food diary this morning it has been observed that we are not eating enough vegetables, so - EAT MORE VEGGIES STUPID!

I second that comment..come on sun..we need ya buddy...and wind go away...Oh wait a minute..I saw the sun Buffy...YAY...We saw some rabbit tracks..so I will cut up a potato for it today..bless its little heart..I know I can't take care of all the critters but I can help the ones I can...Right???...have a great day girl...:O)

Yep, veggies take deliberate focus. Weird, like exercise, WHEN I fix salads and veggies I notice I eat them first and love them - so why the resistance to fixing them? I find on Atkins also, due to getting off processed sugar, veggies taste so sweet now so hopefully the habit of preferring them will grow.

Elizabeth - I know what you are saying. I think it comes down to me being lazy. I need to prepare a big platter of them for dinner tonight and throw the leftovers into salads and stir fries.

The sun is out up here, it looks great though it hurts since I have a tremendous headache. We had a little dusting last night, not more and are still just at 22F. Not windy right now, actually the right weather to bundle up and take a hike in the woods. Not today, at least not for me. Am on call again so have to stick around and be ready to jump into the car./// As for the veggies, I don't eat enough either though I try. For me it is plain laziness. I like to eat what I just have to rinse off and here we go. A long preparation time keeps me form eating them often. That's why I end up a lot of times with just tomatoes and peppers. Even lettuce is too much work, chopping it. I try to eat it anyway but most of the time I have the bagged ones, not the best choice but I guess better than nothing. I remember years ago I even prepared my favorite fruits on a Sunday, chopping the pineapple and keeping them in a container so all I had to do during the week was taking it out. since I am thinking about it, maybe I could do that with broccoli as well. would bring some variety into the menu :-)////Talking about critters, I better get out and fill up the bird feeders. Not much food for them right now and since it is so cold they need a lot to stay warm. Maybe I can even go ahead and fill some pine cones with peanut butter. They would love it.

The sun is up and out in my area too, but the roads are still a mess, with all the snow we got yesterday. So, I'll be chillin' out today, with nowhere to go, but church, tomorrow. Videos, and some easy cooking today, and like you veggies will be center stage. Have a great day everyone. :-)

Amazing how a little sun can go a long way ;-) We plan our meal based on the veggies we have and how to combine it with the protein of the night.

Jozette - that is a good plan - prepping veggies and pre-packing it. So on work days all we have to do is grab and go.

Hope the sun has come out there for you, Buffy! It has here & is nicely melting the snow dusting we got. Plus it just feels so much better in the sunshine! One tip a friend shared with me for eating more veggies is to add frozen veggies to soup. I love soup when its cold out like this, but since I don't really cook, I buy fresh soups at Whole Foods or Trader Joe's or one of my local health food stores. Then, I microwave frozen mixed veggies & add them in, so my soup almost becomes a stew, & is a meal in itself. Trader Joe's also has a great white bean hummus dip, and spinach & kale greek yogurt dip which are both great with fresh veggies. Happy veggie eating, my friend!

Ruhu has a great idea! I make the Mark's Daily Apple kitchen Sink soup too and add a package of frozen spinach then we have veggies for days. I'm just not in the mood to shop this week but funny thing I think I have every thing for that soup. Thanks for the reminder Miss Buffy and Ruhu!

Jealousy - I just looked up the weather and you'll have 70F by Wednesday. We'll only be at 50F :-( /// I know what MY long term goal is (besides losing weight and staying there) - migration "lol"
